Sweet and savory crepes.

These were actually super easy and tasted great. I LOVE crepes, my favorite being savory so these cheesy veggie crepes were perfect. I ended up making a sweet version for little Z in case she wasn’t up for stinky cheese crepes first thing in the morning. She loved them and asked where I got the pita bread from? When J got home from yoga a few minutes after I snapped the photos she ate em up and loved em too. She of course loved the sweet ones best. Those I just used the same crepes and filled them with plain organic yogurt, fresh organic strawberries and a little powdered sugar inside and on top. These crepes took no time at all and were perfect whatever you decide to fill them with. Eat up!

Awesome no rise no wait pizza dough, srsly.

Pizza again? Of course, and getting better every time. Most pizza doughs require you to start making your dough and hour to and hour and a half before you can even start cooking it. Wank, I’m hungry NOW. A friend sent me some recipes awhile back and I decided to dig this one up for fast pizza dough. 10 minutes for yeast to rise and 10 minutes of kneading, that’s just enough time for the oven to warm up, perfect! I typically fall into the lazy man category so I’ve always went with the “let it rise for an hour while you do nothing” theory. This time I was tired of the girls being ravenous monsters by eat time and wanted to avoid all lashings from them. The pic above is of the first pizza out of the oven which I kinda burnt. The second was way better but this one was still amazing. We all ate every piece of both pizzas. I wish I had taken a pic of the crust underneath because it was gorgeous. When the pizza is done it’s great and recommended to drizzle a little more olive oil over the whole thing and grate a little fresh Parmesan cheese. I will be making this many more times in the future when I want great homemade healthy pizza from scratch, and FAST.

Asparagus, balsamic reduction & tilapia.

This meal was light and great. This could be the best way I’ve cooked asparagus to date (which is only like my 3rd time). Baking it was awesome! It gave it a light toasty outside with a soft flavorful inside. So yummy even on its own. The balsamic reduction was wonderful and worked well when mixed with the fish and lemon. I cooked the fish the same way as I did for the curry styley because it’s super simple, clean and tastes awesome. Just like the first time I cooked fish this way, and just like the asparagus, it tasted great by itself. Add a little pepper and lemon and wow! I had to half the asparagus recipe because its all the asparagus I had but I could have eaten the full amount no problemo. I give this dish two big fat kiss’s **, yum nom nom.
