J is slowly getting used to brown rice. She ate all of it up with this here soup!
We had one fillet of uncooked catfish left over from the night before so when I came across this recipe I knew it was meant to be. J was feeling a sickness coming on so soup sounded perfect for her too. I thought the catfish part of the soup would throw her off but instead she said go for it. Further proving that when we think we know what people will say, we really have no clue.

I used this batter to deep fry some white cod last night. It turned out so good. A squeeze of fresh lemon juice and dipped into some malt vinegar, yum! The recipe called for two pounds of fish and we only had one but I figured I’d make the full recipe anyway and use the remaining for some onion rings (chips). These onion rings were perfect, some of the best I’ve ever had. The left overs I reheated in the oven the next day and they were just as good. So unhealthy but O so good.

This is the first time I have ever cooked wild Salmon and possibly the first time I’ve eaten it as well. I’ve always heard great things about it and I have to say they were true. We’ve been eating free range everything lately as well as only organic grass fed beef thanks to food inc. (movie). Grass fed beef has a slightly different taste and at first took a little getting used too. I guess you could say its a tiny bit gamey. So my first thought is that wild salmon would be the same but it’s not. Wild salmon takes no getting used too at all as it is perfection on its own. The wild salmon and naturally grass grazing beef both have a deeper red color to them which I find kind of interesting. I’ll be doing my best to stay away from the farm raised salmon from now on as we like to do things more naturally around here. On a side note I wouldn’t eat anything other than grass fed beef and it tastes wonderful FYI (I just don’t want to scare anyone off from a product that is amazing for you by saying it’s gamey because it’s really not bad and its so much better for you. One article I read went as far as to say grass fed beef as opposed to corn fed is a totally different product. One is good for you and the other is not. They are not the same cow.). So enough about those beautiful grass grazing cows and lets get on with some wild Alaskan salmon!
