One thing is for certain, I LOVE corn. No matter yellow or white just as long as its sweet. I can probably put it into just about anything. Burritos, sushi, mashed potatoes, I’ve put it in spaghetti and would even consider sweet corn ice cream. I’m sure J is thanking her lucky stars we don’t own an ice cream maker right about now. Another certainty is my love for chowder, any chowder really although I prefer the creamy version to the Manhattan. So this dish was a perfect match for my taste buds. It was creamy but not too creamy and full of tender diced potatoes. I omitted the tomatoes but will definitely add them next time. The funny thing was Z said at the table “this would be great with some tomatoes”, she had no clue that the recipe actually called for them. She has a gift I tell you. I added and substituted a couple other ingredients like onion powder for onions but all in all it came out great. I think the next time will taste even better. Try it out, I know I’ll be making it again.

I wanted to post these sushi/nori rolls from Ani’s book so bad so I did a quick search to see if it’s already out on the internet to make sure I’m not posting her whole friggin book on my blog. Since Ani herself has a video posted of this recipe I figure it’s not gonna hurt anything. There is a second roll that J actually liked better from Ani’s book called the “save-the-tuna” roll (I like this ginger one better myself). Google it and you’ll find the recipe for that one easily as well. These raw rolls will kill your sushi cravings with a quickness. Between the two rolls it seems a lot of mix and match is possible so try these out and after that get creative and experiment with making your own combos. Use cashews instead of sunflower seeds or use sunflower seeds instead of almonds (they’re cheaper) or use different spices and fillings. Come up with your own unique rolls and pates and enjoy!

These will last up to two days in the fridge.
If I keep posting recipes from Ani’s Raw Food Kitchen, by Ani Phyo I may get sued but I just can’t resist. These tarts are the bomb. They are by far our favorite out of Ani’s book hands down. J said they taste and look like something you would get at a nice restaurant and has requested me to make these several times since. I usually just halve the recipe since there are only three of us. I squeeze half the recipe into three cups and it works out perfect. Be sure to use individual mini tart cups or like I used, the individual silicon muffin cups. That way you can flip them over to remove them one at a time. Or if you made one large tart you can just leave it in the pan and take out individual slices. I like the little personal cups myself. Z loved them needless to say. Whole food, raw, nuts and fruits, the best food you can put in your body. Don’t skip this one!
