Raw fruit and vegetable salad.

Another raw whole food snack that is quick and easy. Basically the same as the cucumbers from the other day but more variety and the added bonus, fruit! It uses the same sour cream and dill mixture but this time adds a bit of creamed horseradish for some extra kick (optional). There were happy plates all around (I made Z’s version without the horseradish and J picked around the celery but I cleaned it all up like a good any good scavenger would).

Above is the final product, looks pretty huh? Although I do love it when all the ingredients are laid out on a huge cutting board, it just looks so healthy and tasty, God’s candy. I’m lucky I even had any fruits and veggies left as little hands kept running by sneaking a few pieces here and there, which is fine by me.

Raw Fruit and Vegetable Salad

Makes 4 small sides, 2 large.

Ingredients
1 organic apple
1 small organic mango (didn’t have, I used an organic apricot)
8 organic radishes
2 organic celery stalks
1/2 c. organic sour cream
1 t. creamed horshradish
1 T. fresh organic dill (didn’t have, I used dry equivalent)
fresh cracked black pepper
Preparation

Cut up all fruits and veg into bite sized pieces, whatever size you like best. Combine and mix sour cream, horseradish, dill and pepper in a medium mixing bowl. Mix in the fruits and veggies and voila! A raw, whole foods snack.
