
More raw goodness here with these little truffles I found on foodgawker. Simple quick and healthy and a great snack for the little ones. J was alright with them (the dry cocoa powder covering them threw her off I think) but Z gobbled ’em up! I usually don’t like cocoa mixed with dates to make/fake a chocolate-like substance but for some reason these just worked. My food processor couldn’t get the nuts to become smooth but I actually liked ’em that way, kind of crunch bar-esque. I think it adds to the beauty of when you bite into them and expose their insides. Experimenting is in order here as you can’t have a box of chocolate truffles that are all the same, time to get creative in the kitchen.

I personally love the cocoa powder on the outside of truffles. Mmmmmmm.
Raw Chocolate Almond Truffles
Recipe swiped from Jules Food.
- Ingredients
- 8 raw organic dates (or 4 dates and 4 figs)
- 1 t. raw organic vanilla
- 1-1/3 c. raw organic almonds
- 2-3 T. raw organic cocoa powder
- 3-4 T. raw organic unsweetened coconut flakes
- 1 t. coconut oil
- Preparation
Blend all ingredients in a food processor until it becomes as smooth as you can get it. Roll into balls with your hands then roll in some more cocoa powder and/or coconut flakes if you wish. Cool in fridge. Easy as that!
