When I dip you dip we dip.

I still haven’t locked down the perfect hummus but I’ve come close, and close is far better than most, but I have found a very nice baba ghanoush recipe. It will vary in consistency depending on how large or small your eggplants are but no matter what it comes out tasting great. The recipe calls for two large eggplants and this time I ended up using three smaller ones. I also used a different brand of tahini and that makes a difference too. Overall it still comes out with wonderfully rich and smokey eggplant flavor. Top with cold pressed EVOO and a squirt of Sriracha on the side for some kick (I personally prefer the chili garlic version that comes in the large screw top container over the more popular squeeze bottle version).
