
Fish, one of my favs and a wonderfully healthy meat. Tilapia is a cheap white fish that is delicious. Add in parmesan cheese, butter, mayo and BAM! (sorry for that). Now, I only used 1 lb of fish and I’d like to say I accidentally made the full amount of cheese topping for half of the fish required but I completely knew I was doubling the topping. I’m horrible, a bad habit of mine (doubling sauces). Of course it came out super good and maybe even better for some peoples liking. Light on ingredients and time, heavy on flavor. Will make again and again.

Parmesan Tilapia
Makes 4 portions. 2 if you only use one lb of fish.Recipe from Dine and Dish.
- Ingredients
- 2 lbs tilapia fillets (white fish) (I used 1 lb which basically doubled the sauce)
- 2 T. lemon juice, about 1 lemon
- 1/2 c. grated parmesan cheese
- 4 T. butter, room temperature
- 3 T. mayonnaise
- 3 T. finely chopped green onions
- 1/4 t. seasoning salt (I like Old Bay seasoning here)
- 1/4 t. dried basil
- fresh cracked black pepper
- 1 dash hot pepper sauce
- Preparation
Preheat oven to 350 degrees and spray a 13×9 baking dish. Lay fillets in dish (do not overlap much if any) and squeeze juice over top covering well. Bake fish for 10-20 minutes till it starts to flake. While it bakes, in a bowl combine cheese, butter, mayo, onions and seasonings. Mix well and set aside. When fish starts to flake take out and spread mixture over top and bake an additional 5 minutes. I ended up setting it to broil for a second to get it more bubbly/almost brown on top. Done!
