Turkey and red quinoa wraps.

OK so it’s seems like it’s been forever since my last post but I promise I have been in the kitchen and taking pics the whole time. It’s just that for one reason or another I don’t post some things. Usually it’s either the pic came out good but the food didn’t taste as great or vice versa. However I did have some recipes/pics that came out wonderful. The wraps above were one of those said recipes, healthy, low cal and super tasty. Their also so simple to make, just ground free range turkey breast and quinoa wrapped in a fresh and crispy piece of roman lettuce and drizzled with a sauce that could… well, make anything taste good. The lettuce wrap idea is kinda of a new addiction round here although I hope I’m not running it into the ground. I’ve been tired of making tortillas from scratch every time we want tacos because they add an extra half hour of prep time as well as they come with extra calories. So by using this simple, God created taco-like shell (the Romain lettuce leaf) all I have to do is break off a few leaves, rinse and pat dry and voila, the perfect delivery method. They even give that awesome taco-like crunch. These aren’t tacos per say but more of an Asian wrap or Asian taco fusion, ha! The possibilities are pretty much endless of what you can wrap in one of these lovely green boats.

As for quinoa, this is my first experience. This stuff is a great filler and is super healthy for you. It’s a must for any vegetarian because its the only non-meat that’s a complete protein. Wikipedia can give you a lot more info on this amazing food, we’re fans.

Turkey and Red Quinoa Wraps


Ingredients
Romain lettuce leaves, rinsed and dried
1 lb. free range organic ground turkey breast
1/2 c. dry organic red quinoa, prepared per box instructions
sea salt and fresh cracked black pepper to taste
amazing sauce
Preparation

Start cooking ground turkey over stove top adding salt and pepper to taste. While that cooks simply cook the red quinoa per box instructions (Mine said basically microwave two parts water with one part dry red quinoa for four minutes covered. Take out and stir then cook again for an additional two minutes. Done). Start preparing sauce while turkey and red quinoa cook. When everything is done drop a little turkey in a wrap, then a little red quinoa and drizzle with the sauce. Start crunching!
