I picked up some organic mozzarella from whole foods the other day so I could try my hand at making flat bread pizza. Then I came across this pesto recipe used on a pizza in an old issue of Sunset Magazine ($.29 at savers). I remember the first time that I made pesto I used basil and it turned out perfect but, the next couple times something missed the target. I think it was that I couldn’t find that original recipe and the others couldn’t quite live up. I didn’t have basil around this time but I did happen to have a couple bushels of cilantro, parsley and mint so I figured I’d go ahead with Sunset’s “Perfect pesto” recipe using all three herbs (equal parts cilantro and parsley with about 6 mint leaves). I already planned on using kalamata olives and going a little Mediterranean with it so I figured why not use a little mint and cilantro. It tasted awesome and I’ll be using this basic pesto recipe from now on, no more searching, definitely some experimenting with herb combos but no more measurement/amount alterations.

This sauce is not meant to be used on noodles or at least is doesn’t state that in the recommended items to use it with in the recipe but I didn’t have the cucumbers, tomatoes, or really any fresh veggies at the time. So I tossed it with some noodles and added a little fresh grated Parmesan cheese to add some saltiness. It worked out nicely I’d say. J liked it too, Z not so much. Probably because it’s super heavy on the garlic. So there you have it, a tasty garlic sauce for veggies (or noodles!) made with raw fresh ingredients.

J’s been busting my butt about going to Macayo’s Mexican restaurant for their enchiladas. She usually gets one Baja style (green) and one regular cheese. I must admit, enchiladas have always been one of my favorite Mexican dinners so I can totally relate. Enchiladas are always good in my book, even when their bad. Some of my favorite are from a fast food joint in Topeka, KS called Taco Tico, it’s all about their sauce baby. My mom also makes a killer enchilada. She makes it flat style and uses old el paso enchilada sauce from the can and it’s some of my favorite store bought. Not sure if it’s just because it reminds me of simpler times or if it’s just good. For moms you just layer everything, stacking it up as high as you want, tortilla, meat, sauce, cheese, tortilla meat, lettuce and so on. The ones pictured above are more like the ones you get in a restaurant (like Macayo’s). I’d rate these as better than average, J expressed her appreciation for them more than once so that’s a good sign. I think she even muttered “goodbye Macao’s”.
