Brown rice, sweet corn, scrambled eggs and grilled onions = golden fried rice.
Another basic/base recipe and a great use of leftover rice, super yummy fried rice! I’ve attempted fried rice on several occasions in the past and always failed miserably. It mostly had to do with the fact that I couldn’t cook brown rice that well, actually it was always horrible to the point of inedible. It was so mushy. I tried using a regular covered pot and a rice cooker both to no avail. Then I found a lovely easy recipe online and it has worked out perfectly for me ever since. Thank you Steve Pavlina. Now that the brown rice is turning out nicely my fried rice is much better. This simple recipe has plenty of room to grow, different herbs and spices etc. I just used onions, corn and eggs keeping it simple this time (really, it’s all i had). As for a quick and tasty way to use up some leftover brown rice this is just wonderful.

Whats more American than the Chinese buffet? Well, lot’s of things but you know what I mean. J is not huge on the Chinese buffets but me and little Z have made it kind of a tradition when we are spending a daddy daughter day together. In my opinion you can actually make the Chinese buffet a healthy meal if you can control yourself. There are a ton of vegetable dishes to choose from and they usually keep all the fried stuff together so you can just stay away form that particular island. They usually have a dedicated island for fruit and salads too. Now, I know their not using all organic ingredients and there is a ton of oil, sodium and unrefined sugars in there so it’s not something to eat all the time, but the bad rap they get sometimes is not too deserving. Anyway, when we hit the Chinese buffet one of the standards is the green beans. Simple, crispy and in a wonderful little sauce. I grab a claw full on my first round for every time, sometimes even for seconds, I just love em. So in my attempts to recreate all the things I love from restaurants as well as my attempt to get more veggies in our household meals, behold the Chinese buffet style green beans!

The search for the perfect cashew chicken continues. This one was a bit further off the mark but good non the less. As far as the leftovers test goes this dish had none, that’s a good thing. The picture from the recipe I used looked a lot more like Archie’s amazing sauce/gravy that I’m looking for but when I made it, it looked nothing like that. So I’m assuming it’s the different brand of hoisin I used. Like, I don’t know how her’s came out with a more auburn color and mine was so dark and dry. It had to be the hoisin and as I think back I have a strange hankering that I forgot to add the 1/4 c. water, oops! Oh well, it was very edible and yummy just not anywhere near Archie’s. And the search goes on…
( I may try this one again with a different hoisin and make sure I add the H2O. The picture of her’s looks too much like what I’m trying to achieve that I feel something went horribly wrong here.)
