Made this real quick last night as we really didn’t have much around the house to eat. It was tasty and did the trick of filling the void. I’m still trying to slip in as many beans as I can as a substitute for breads/rice. They just have more value/protein to them as a “filler” and are much less refined. It’s pretty much impossible to replace bread in all its awesomeness though. J liked it “ok”, Z was having it talk to the hand at first but later started sneaking little pieces of potato. It’s not an out of this world dish by any means but like I mentioned before it gets the job done and with a nice simple flavor. I personally have always liked potatoes in Asian dishes, it doesn’t happen that often but when it does I’m always a fan.

Whats more American than the Chinese buffet? Well, lot’s of things but you know what I mean. J is not huge on the Chinese buffets but me and little Z have made it kind of a tradition when we are spending a daddy daughter day together. In my opinion you can actually make the Chinese buffet a healthy meal if you can control yourself. There are a ton of vegetable dishes to choose from and they usually keep all the fried stuff together so you can just stay away form that particular island. They usually have a dedicated island for fruit and salads too. Now, I know their not using all organic ingredients and there is a ton of oil, sodium and unrefined sugars in there so it’s not something to eat all the time, but the bad rap they get sometimes is not too deserving. Anyway, when we hit the Chinese buffet one of the standards is the green beans. Simple, crispy and in a wonderful little sauce. I grab a claw full on my first round for every time, sometimes even for seconds, I just love em. So in my attempts to recreate all the things I love from restaurants as well as my attempt to get more veggies in our household meals, behold the Chinese buffet style green beans!

Santa Fe Falafel found in a delish.com magazine off the rack originally from Redbook and oh so good. It’s a little crazy to me to think that I had most of these ingredients laying around but I did, other than the pita and pintos. Tortillas worked great for J but for myself I enjoyed mine like I enjoy traditional Mediterranean falafel, on a bed of greens with a little dipping sauce. Now looking at the ingredients it seems like a very long list but really its not too bad. The last few are for the chipotle sauce that once you make it, the next time you don’t even need to look at the ingredients you just whip it up. The patties came out nice and crispy using only cooking spray, awesome! I also loved the fact that I could use the old tortilla chip crumbs that were just going to be tossed anyway. Overall it had mucho southwest flavor which I don’t get often enough. There is also something about mashing up some beans (I had to use kidney because it’s what I had) with fork to make patties in place of meat. It just felt healthy and right. It felt very earthy with all the garlic, herbs and peppers added. This will be made again fo shizzle.
