J is slowly getting used to brown rice. She ate all of it up with this here soup!
We had one fillet of uncooked catfish left over from the night before so when I came across this recipe I knew it was meant to be. J was feeling a sickness coming on so soup sounded perfect for her too. I thought the catfish part of the soup would throw her off but instead she said go for it. Further proving that when we think we know what people will say, we really have no clue.

I love basic recipes/formulas that have a million possibilities and this no crust quiche is one of them. The no crust part makes it a low calorie yet high protein breakfast (whole pie: 830 cal. 55 g. protein). Since there are three of us I divided it into six portions so we could have it again for breakfast tomorrow. Cutting it into sixths, each serving is almost 10 whopping grams protein and only about 140 calories. Come on man, that’s just awesome! J and Z both loved how these turned out, J actually said it was cooked perfectly. We easily could have eaten the whole thing, and still would have been under 300 calories with 20 grams of protein each, sorry but I love doing the math on this one because it always comes out a win.

Spring rolls are one of the freshest tasting things you will ever eat. With fresh basil, mint and cilantro how could they not be? Add that strange rubbery rice paper wrap and a thick sweet peanut dipping sauce and we’ve been transported to heaven once again. Spring rolls are an awesome snack but will fill you up super quick so if you eat to many to fast you may end up having them as your meal. Although the standard ingredients are listed in the recipe below, you could peel carrots or zucchini into thin strips, whatever you have and think sounds good really. Spring rolls are very versatile. Most restaurants put pork in them but anything goes. The main ingredients are the bean thread noodles, lettuce and herbs. Though the bean sprouts give it that awesome needed crunch if you ask me. Try them at your local Vietnamese restaurant or make them yourself, they are a guaranteed hit. And the peanut sauce is amazing. If any is left over I end up eating it off my finger.
