Pad Thai & Asian salad dressing.

I think we’ve found our go to recipe for Pad Thai. The key is to make it quick enough after the noodles are done to prevent them from sticking/clumping together. I add a little oil to them in the strainer to keep them separate and slick. There is nothing worse than a clumped together ball of rice noodles which is what usually end up happening when you get take out. The other key is just the simple three ingredient sauce. It really is as easy as one two three. 1 T. vinegar, 2 T. Asian fish sauce and 3 T. unrefined sugar. The rest is what you want to add (sprouts, peas, tofu, chicken, shrimp, veggies, eggs) and of course the rice noodles. Although any long noodle will do. I like to use the thicker pho noodles. I’ve also added a recipe for an Asian salad dressing which is also a good basic recipe. It was a nice change from our normal vinaigrette and a much better accompaniment to the Pad Thai.

Laotian catfish soup.

J is slowly getting used to brown rice. She ate all of it up with this here soup!

We had one fillet of uncooked catfish left over from the night before so when I came across this recipe I knew it was meant to be. J was feeling a sickness coming on so soup sounded perfect for her too. I thought the catfish part of the soup would throw her off but instead she said go for it. Further proving that when we think we know what people will say, we really have no clue.

Fried rice.

Brown rice, sweet corn, scrambled eggs and grilled onions = golden fried rice.

Another basic/base recipe and a great use of leftover rice, super yummy fried rice! I’ve attempted fried rice on several occasions in the past and always failed miserably. It mostly had to do with the fact that I couldn’t cook brown rice that well, actually it was always horrible to the point of inedible. It was so mushy. I tried using a regular covered pot and a rice cooker both to no avail. Then I found a lovely easy recipe online and it has worked out perfectly for me ever since. Thank you Steve Pavlina. Now that the brown rice is turning out nicely my fried rice is much better. This simple recipe has plenty of room to grow, different herbs and spices etc. I just used onions, corn and eggs keeping it simple this time (really, it’s all i had). As for a quick and tasty way to use up some leftover brown rice this is just wonderful.
