Onion rings.

I used this batter to deep fry some white cod last night. It turned out so good. A squeeze of fresh lemon juice and dipped into some malt vinegar, yum! The recipe called for two pounds of fish and we only had one but I figured I’d make the full recipe anyway and use the remaining for some onion rings (chips). These onion rings were perfect, some of the best I’ve ever had. The left overs I reheated in the oven the next day and they were just as good. So unhealthy but O so good.

Onion Rings

Batter recipe pulled together from several recipes on the net. This batter was for a deep fried white fish like cod.

Ingredients
2 inches deep of a high heat oil such as peanut or canola
3 onions, give or take
3/4 c. unbleached flour
1/4 c. whole wheat flour
2 t. baking powder
1 t. sea salt
1 t. unrefined sugar
1 c. spring water, about
1 free range egg, separated
1 t. butter, melted
Preparation

Heat two inches of a high heat oil such as peanut or canola oil to about 350 degrees (it was medium-high on my stove). Sift together the flours, baking powder, sea salt and sugar. Add the egg yolk, melted butter and enough water to get a pancake batter consistency. Beat egg white into stiff peaks and fold into batter. Slice onions into rings. Dip in batter and fry in batches allowing plenty of room so rings don’t touch. Fry till golden brown, about six minutes. This is a great batter for white fish such as cod. So unhealthy but so good.
